Sweet Potato Gratin

Ingredients:

4 medium sweet potatoes, washed, unpeeled

1/2 tsp. salt

1/2 cup butter

1/2 cup sugar

Juice of one orange

Juice of one lemon

1 Tbsp. grated orange peel

1 tsp. grated lemon peel

1/8 tsp. ground cinnamon

1/8 tsp. ground white pepper

1/4 cup sugar sprinkled on top

Preparation time: 35 minutes

Cook time: 15 minutes

Serves 5-6

Directions:

Preheat oven to 375°F.  Place sweet potatoes and salt in a 4-quart saucepan.  

Add water to cover.  Bring water to boil then reduce to a slow simmer, cover and cook for 30 minutes or until tender.

Drain and cool slightly.

Peel the sweet potatoes and place in a large bowl.

With a mixer on low speed, beat potatoes, butter, 1/2 cup Sugar, juices, grated peels, cinnamon, and pepper until light and fluffy.

Spoon mixture into a buttered 2-quart casserole dish.

Sprinkle top with remaining sugar.

Bake for 15 minutes.
